I love eggs. I mean I really LOOOOOVVVEEE eggs. That yolk-y goodness is just irreplaceable, but even I like to do a little egg-less breakfast every now and then. I learned this skill during my AIP elimination phase. I wish I had thought this one up back then! It’s the brain-food baby of a paleo quiche I made and my cauli-alfredo sauce. This egg-free breakfast pot pie is so good!

Paleo Brunch Ingredient Recommendations
I get a lot of my paleo pantry ingredients from Thrive Market and local grocery stores. Since I’ve beeing eating this way for a while now, I have lots of experience with all the alternative flours and non-dairy options. Here are some of my favorites, linked below for easy shopping.
Tigernut Flour – No, it’s not made of tigers … or nuts. Tigernuts are surprisingly a root vegetable! Tigernut flour is a great grain-free, nut-free option that I’ve been really enjoying lately. I also use whole tigernuts to make dairy free milk.
Cassava Flour – One of my favorite gluten free flours for baking. It’s starchy and gives you a nice crunch without being crumbly.
Butter Flavored Coconut Oil – This stuff makes dairy-free no problem. It tastes just like butter and has a high saturated fat content.
Avocado Oil – Perfect for frying because of the high smoke point. Make sure to choose 100% avocado oil (or olive oil) that comes in a dark glass bottle. More on choosing healthy fats here.
