Why You Need These Whole30 Steak Nachos
I get it, this dish doesn’t have corn tortillas, or cheese or salsa… but the overall meal template is a-la-nacho! Crispy base, meaty and saucy toppings… Whoot Whoot! Whole30 Delicata Squash Steak Nachos baby! This meal has three parts and by cooking everything in a specific order, it makes it very efficient. Air Fry or pan fry the squash (takes about 10 minutes), pan-fry the steak, add the toppings.

- Delicata squash – Delicata is a winter squash with a yellow and green striped skin that is delicate enough to eat. Their slightly nutty and sweet flavor is absolutely delicious and they are only 10 grams total carbs per cup! The trick to beautiful, tender, yet crispy squash chips for your nachos is to cut them in even, 1/4 inch thick pieces.

- Hass Avocado – Make sure your avocado is nicely ripe because you’ll want that soft and creamy texture for the guacamole.
Step-by-Step Whole30 Steak Nachos
- Heat a large cast iron skillet over medium heat. Add the bacon to the skillet while it heats. Cook about 5-7 minutes per side until very crispy. Remove from the skillet and set aside.
- Score your steak on once side in shallow cuts creating a grid like pattern.
- Sprinkle all over with 1/2 teaspoon salt and 1/2 teaspoon dried oregano.
- Cook on the hot skillet, in the bacon grease for 4 minutes a side. Do no move once you put it down, you want it to get a nice char.
- While the bacon and steak cook, halve your delicata squash and use a spoon to scrape out all the seeds.Then slice the squash into 1/8 thick inch rings.
- Toss the rings with salt and sazón and arrange flat on the air fryer basket.
- Spray liberally with coconut oil spray and air fry at 400F until browned and crispy, about 10 minutes.

While the squash chips fry- let’s work on some guac…
- Mince the cilantro and garlic finely
- Use a spoon to scoop out the avocado into a bowl
- Add the cilantro, garlic, and juice of one lemon to the avocado and mix it up.
- Salt to taste- and add any other spices you like in your guac!
- When the Delicata squash chips are done, slice the steak finely and layer it all on a plate.

- 1 small delicata squash (about 6 inches long)
- 1 ripe Hass avocado
- juice of 1 lemon or lime
- 1/4 cup chopped cilantro

- Thinly sliced radishes
Instructions
- Heat a large cast-iron skillet over medium heat. Add the bacon to the skillet while it heats. Cook about 5-7 minutes per side until very crispy. Remove from the skillet and set aside.

- While the steak and bacon cook, slice your squash into 1/4 inch thick slices. Run the knife around the inside of the rings to seed.
- Toss with salt then arrange flat on the air fryer basket or sheet pan.
- Spray liberally with coconut oil spray and air fry or convection roast at 400F until browned and crispy, about 10 minutes.
- Turn over or toss and give them another 2 minutes if needed.
- While the squash cooks combine the avocado, garlic, lemon juice, cilantro, 1/2 a teaspoon salt in a bowl and mash together.
- Then the squash is done, layer it all over a large plate. Sprinkle with a little salt.
- When the steak is done remove it from the skillet to rest then slice it up and chop the bacon. Layer it over the squash and finish with a dollop of guacamole.
