Why This Dressing Works
If you’re wondering WHAT IS AIP? Why is this Apple Cider Salad Dressing so great? The autoimmune protocol or autoimmune paleo – AIP for short is a powerful elimination diet for those who have an autoimmune disease to uncover the connection between food and symptoms. I have a whole post RIGHT HERE that explains the Autoimmune Protocol. To say the least, it can be challenging to come up with a dressing that DOES work within the protocol but this salad dressing fits right in and doesn’t leave you wanting… This tangy, herby superfood dressing comes together quickly and easily when you are in the mood for greens.
Ingredients for AIP Vinaigrette
- My favorite oil for dressings is extra virgin olive oil. I love the high antioxidant content and peppery finish.
- The star of the show is apple cider vinegar, not only for its delicious flavor but it’s used for home remedies as old as time. Benefits including antimicrobial and antioxidant effects.
- Adding a little coconut aminos for sweetness and an AIP-friendly seasoning blend for a delicious Apple Cider Salad dressing that will become a staple in your home.

Yes! You can double or triple it! This makes enough for 2 large salads.
I like to store it in the fridge. The EVOO will get solid, but letting it sit out for a little brings it back to liquid quickly. Shake well and use.
Absolutely, any monounsaturated fat will work well. Check out my guide to real food healthy fats here.
Sure! I’m partial to coconut vinegar, red wine vinegar and rice wine vinegar.

Can this be stored at room temperature? I am wanting to take this in my backpack on vacation. It won’t be hot where we are going.
Hazel says
If you’re going on a short trip and can keep the dressing in a cooler or insulated bag, it should be fine for a day, but if you plan to be without refrigeration for an extended period, it’s advisable to consider alternatives or buy a commercially prepared dressing that is shelf-stable.
Amber says
I guess I just don’t understand why it has to be refrigerated because none of the ingredients have to be refrigerated by itself.. I will be going on a long trip. It will be in my carry on bag on a 8 hour flight and then in my backpack during the day exploring and then in the fridge at night at the hotel. I was going to take individual packets of balsamic vinegar but I wanted a dressing that had a little extra flavor and balsamic vinegar by itself will sometimes make me choke. I wanted eat a salad all the time but when needed I will. I can’t find a shelf stable dressing that I can have because of allergies. Thanks
Hazel says
Hi Amber, packing the dry and wet ingredients separately can extend the shelf life, mix them just before you’re ready to eat, avoid fresh herbs, please note that we cannot provide an exact duration for the shelf life.

I’m excited to try this recipe. I don’t have dried parsley or basil. Can I leave that out, or do you have recommendations for a substitute?
Cristina Curp, FNTP says
You can leave them out or use chives or an italian herb blend
