Summer is in full swing, and the weather in South Florida is H-O-T! No-cook meals are in high demand and I’m all about it. You can whip up a delectable meal with simple ingredients that not only satisfy your taste buds but also nourish your body.
With everything going on right now it’s easy to let nutrient density slip, we’ve all had to reconfigure our lives and our routines. For health nuts like me, it’s been difficult, my routine is everything to me. However, I’m a big believer in making the best of any situation.
Feeding the entire family several times a day? Meal prep! Gyms are closed? Go for walks. Going to the store is a hassle? Order online or buy in bulk! Living a healthy life takes a little commitment, we can’t let “life” get in the way- these healthy habits are our life.

This Summer Seafood Salad works with any seafood you have on hand, from (in season) lobster to cocktail shrimp, or cooked mahi-mahi. I love to use fully cooked shrimp or langostinos because they’re delicious and a wonderful source of anti-inflammatory EPA and DHA omega-3 fatty acids. Our bodies cannot produce omega-3 or omega-6 fatty acids so it’s imperative that we consume them. It’s way easier to get your omega-6 (pro-inflammatory kind) in (found in nuts and seeds), but omega-3 fatty acids (the anti-inflammatory kind) is found mostly in seafood!
