Summer time is funny in that the kids are around more, so you want to make some goodies for them… maybe you also feel a little more snacky or wanting a sweet treat more often… BUT it is so freakin’ hot that turning on the oven all the time is a no-go. Enter this refreshing, vegan and paleo banana pudding.
This no-bake blender batter recipe keeps the kitchen cool and clean. With just a little forethought (because you want to soak those cashews in advanced) you can quickly whip up this creamy and satisfying treat that offers healthy fats, a little protein, energizing carbs, and some cookies for the soul.

This vegan + paleo banana pudding, the summer treat is all about what YOU like. I offer a sweet & creamy base for you to top with your favorite goodies. I must say though- the cookies really make it.
- Use ripe bananas for this paleo banana pudding- this makes it a little sweeter.
- You want to soak your nuts for AT LEAST 30 minutes- but ideally 2hours. If you plan ahead, you can whip this treat together in under 5 minutes.
- For the cookies: I used my Castaway Cookie mix! Which makes the best caramel-vanilla cookies! Just add coconut oil, maple syrup + vanilla extract.
Step by Step Banana Pudding
- Start by soaking your cashews + dates in water for 30+ minutes. Once everything is soft, drain the water and add the cashews & dates to the blender.
- Next add 1 cup filtered water, bananas, vanilla bean scrapping, + salt. Blend until smooth.
- Serve in cups, makes 4 servings. Top with cookies, nuts or more dates.
- Note: If you’re going to let them set in the fridge to cool be sure to cover with plastic wrap so banana doesn’t oxidize and make your pudding brown.

- 1 cup water, more for soaking
- 1–2 vanilla bean
- Pinch of salt
- Your favorite gf or paleo cookies
Instructions
- Start by soaking your cashews + dates in water for 30+ minutes. Drain water once everything is soft.
- Add 1 cup filtered water, bananas, vanilla bean scrapping, + salt. Blend until smooth.
