Keto Pancake Party!
Today I woke up with pancakes on the brain, and since I’m all about listening to my body I made these delicious, keto, dairy free, buttermilk pancakes for breakfast!
It’s been a while since I had breakfast, like actually in the morning. Since diving headfirst into this keto lifestyle I switched my ol’ bacon and eggs for bulletproof coffee, which is normally all I need to keep me going until lunch. Yet my tummy was a rumbling last night, so much so that I dreamt of pancakes. Healthy, grain free, low carb pancakes of course, but pancakes none the less.
Using a little coconut vinegar in coconut milk to make “buttermilk” a small amount of coconut flour and eggs, these pancakes turned out great. They’re definitely Sunday morning kind of pancakes, when you stay in your PJ’s till noon and there isn’t anywhere to rush off to. Or is that just us?
Is That Maple Syrup?
Short answer, no.
I used THIS low carb monk fruit syrup thing. It’s okay. I’ve had the bottle in my fridge forever. In small amounts, it’s sort of passable for maple syrup. Today it did the trick. As with all these fake food things… it’s a personal choice, moderation is key. Jack, my 4-year-old had his pancakes with raw honey. Do what works for Y-O-U.

Keto Buttermilk Pancakes

Description
Dairy and nut free fluffy keto pancakes
Ingredients
- 1 cup full fat canned coconut milk
- 1 tablespoon coconut vinegar (or apple cider vinegar)
- 4 large eggs, seperated
- 1/4 cup + 1 tablespoon coconut flour (5 tablespoons)
- 1 tablespoon golden flax meal
- 1/8 teaspoon fine Himalayan salt
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- Ghee or coconut oil for cooking
Instructions
- Measure out the coconut milk and add the vinegar to it. Set aside.
- Put the egg whites in the bowl of your stand mixer. Mix with the whisk attachment on medium speed until the egg whites become thick and begin to stiffen about 5 minutes. They should look like clouds and cling to the whisk, with soft peaks, but not be completely stiff like merengue
- Set a skillet or griddle to heat on the stove over medium heat.
- In the meantime sift together the coconut flour, baking powder, salt and cinnamon in a large bowl.
- Whisk in the flax meal.
- Stir the egg yolks into the buttermilk and then slowly add that to the dry mix while you whisk until fully combined.
- Let the flour mix sit until the egg whites are ready.
- In this time the flour mix will become very thick. If it doesn’t add in a teaspoon or two of coconut flour to the batter until it does.
- Fold the egg whites into the flour mix until fully combined. To do this, empty half the bowl of egg whites into batter and use a spatula to mix it in, in a folding motion, from the bottom of the bowl, bringing the batter over the egg whites and in. Do this until fully incorporated, then add repeat with the remaining egg whites.
- Brush the griddle with fat. Use 1/4-1/3 cup to measure out the batter for each pancake.
- Cook 2-3 minutes a side. Flip when the edges are dry.
- Serve hot with your favorite add-ons!

Hi and please help! You say this recipe is nut free but there’s coconut flour and oil in it. Do you have a nut free aip keto pancake recipe?

Coconuts are not nuts. The recipe isn’t AIP because it has egg in it. I do have AIP pancakes on the blog, but they’re not keto bc I use plantain. AIP KETO pancakes are pretty much not possible, you need egg, flax, or starch to bind the pancakes. So you can make egg free ones or low carb ones- but not both.

Mine didn’t puff up like this at all, BUT I didn’t measure the liquids carefully (whatever coconut milk was left over from another recipe), and I under dosed each cake (not a full quarter cup). However – they came out tasting FABULOUS! Really good! I’m not strictly keto or paleo right now and live in a household that is super varied…which means these were eaten with pure maple syrup and whipped heavy cream. But whatever your lifestyle, these should be able to fit in beautifully! Thank you for great recipe 🙂

Haven’t made these yet, but looking forward to it. I made ‘buttermilk’ with almond milk and lemon juice the other day. I do a keto/paleo hybrid and have not had dairy in 13 years. Thank you for your dairy-free keto recipes!! Keto recipes are all over the web, but delicious dairy-free keto recipes are so hard to find.

These were delicious and light and fluffy! Note: I added 2 tbsp of monk fruit sweetener to the dry ingredients because I wanted them a tad bit sweet, and it turned out perfectly!

My only complaint is with the time…. Time it takes to make and time it takes to cook! Perhaps I cooked them too long. I can only cook 3 or 4 at a time. And I was hungry! But I will make again, maybe trying to find shortcuts.

Buttermilk pancakes mean they have buttermilk in them. Everything else is simply a “pancake”. Really frustrating for keto folks with leftover buttermilk in the fridge.

For dairy free people, we make a buttermilk by mixing vinegar with a non-dairy milk. The recipe title states is dairy free… so OBVIOUSLY it won’t have cow milk.

I had given up on paleo pancakes as every recipe either called for tree nuts or just didn’t work. As soon as I flipped over the first one I knew these were the pancakes I had been looking for. These look delicious!! I’ll have to try them! Is there a sub for coconut vinegar? I’ve never heard of it or seen it (then again I never looked for it because i didn’t know it existed!) I hate to buy it to only use it for this.

I’m not gunna lie. I had really high hopes for these!! My batter came out like normal pancake batter, even before I added the egg whites, nowhere near as thick as yours looked. 1/4c + 1 TBS coconut flour Only? Really? And they came out tasting very veggie

Hi Jen, yes I used 5 tablespoons coconut flour, forturnately this recipe is well tested and I included the video for folks to trouble shoot… are are some more suggestions…
Did you use a measuring spoon or a kitchen spoon? Was it full all the way? When I measure my flour I scoop and pack it and level off the top. Which brand coconut flour did you use? Did you use coconut milk or another kind of milk… There are many variables here.
However if you batter looked thin, you could always add more coconut flour as needed. These pancakes are not eggy tasting, actually they have that little bit of tartness from the “buttermilk” so good.
