A Global Inspiration
Stuffed cabbage is celebrated across the globe, with regional variations showcasing diverse flavors and techniques. In Eastern Europe, Polish gołąbki are filled with pork and rice and baked in tomato sauce. Ukrainians serve their version, holubtsi, with sour cream, while the Greeks enjoy cabbage rolls topped with a creamy lemon-egg sauce called lahanodolmades. In Egypt, vegetarian mahshi kromb features rice and herbs, while many Asian countries create rolls filled with soy, tofu, and mushrooms.
This recipe draws inspiration from the Polish classic but eliminates nightshade ingredients like tomatoes and peppers. Instead, it uses bone broth for a moist and flavorful result that fits into various dietary preferences.

Tips for perfect cabbage rolls
- To ensure the mix is well seasoned, cook a small portion of the meat mixture before filling the cabbage leaves. Adjust the flavors as needed.
- A good-quality bone broth makes a noticeable difference. Look for one without added sugars, gluten or nightshade ingredients.
- Swaps in the recipe are endless: You can use green or white cabbage, Swiss chards, kappa cabbage, Savoy cabbage, whatever is in season or available at the supermarket.
While this recipe uses ground chicken or turkey, you can swap it for ground pork or beef for a richer flavor profile. You prefer other spices? Just add them in instead of oregano and thyme.
- If you have extra cauliflower rice, serve it on the side just slightly roasted in a pan with some oil and salt.
A Versatile Dish for Any Occasion
Whether you’re preparing dinner for your family, hosting guests, or simply looking to meal prep for the week, these cabbage rolls are an all time favorite. They’re hearty enough to satisfy comfort food cravings but light enough to fit into a health-conscious lifestyle.

- 1 tbsp balsamic vinegar
- 1 tbsp mustard (omit for AIP)
