Easy AIP Breakfast Burger

Ingredients

  • 1lb ground turkey
  • 2 slices prosciutto (check labels, look for ones that are just pork and salt)
  • 2 tsp granulated garlic or garlic powder (not garlic salt!)
  • 2 tsp Italian herb blend (just herbs, check labels)
  • 1 tsp pink Himalayan salt
  • 23 tbsp chicken schmaltz, bacon fat or beef tallow (you can use plant based fat, but the animal fat adds great flavor!)

Instructions

  1. With a sharp knife, carefully mince 2 slices of prosciutto.
  2. Add all the ingredients to a bowl, except the fat.
  3. Mix well and shape in to four patties.
  4. Heat a large skillet on medium-high heat.
  5. Add half the fat to the skillet.
  6. When it’s hot, place the four patties in the skillet, don’t crowd them.
  7. Cook 4-5 minutes.
  8. Drizzle the rest of the fat over the patties.
  9. Flip them and cook another 4-5 minutes.
  10. You may need to lower the heat to medium, if they begin to brown too much.
  11. This might make it a little smoky in your house make sure to have your kitchen fan on, maybe open a window ?
