2 Minute Mint Chip

Easy pease ice cream treat!



  • 1 can full-fat coconut milk, cold, fat only
  • 1/2 teaspoon peppermint extract
  • pinch of sea salt
  • 1 teaspoon sweetener
  • 1 tablespoon cacao nibs or chocolate chips


  1. Open your can of coconut milk and carefully spoon the firm cream into a bowl. Use the back to the spoon to soften and stir it until it’s smooth.
  2. Add in the rest of the ingredients and stir to combine.
  3. Eat, enjoy!
