Description

These Matcha Almond Butter Cookies blend the nutty richness of almond butter with the earthy flavors of matcha, creating a wholesome treat perfect for mindful indulgence.

Ingredients

  • 1 cup almond butter (smooth, unsweetened)
  • 1 cup almond flour
  • 1 egg
  • 12 tbsp honey (for paleo) or erythritol (for keto)
  • 1 tbsp matcha powder (culinary grade or higher)
  • A pinch of sea salt

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together almond butter, egg, and sweetener until smooth.
  3. Add almond flour, matcha powder, and sea salt. Stir until a thick dough forms.
  4. Scoop 1 tablespoon of dough per cookie, roll into balls, and flatten on the baking sheet.
  5. Bake for 8 minutes. Let cool before transferring to a wire rack.

Recipe Notes:

  • Swap matcha powder for turmeric, cocoa powder or strawberry powder to create colorful versions of this cookie
  • These cookies firm up as they cool, so take them out of the oven when the edges are just lightly golden.
