Scale
Ingredients
- 1 green cabbage
- 1 lb ground meat (chicken, turkey, veal, pork
- 1 small onion
- 3 garlic cloves
- 1 cup cauliflower rice
- 1 egg
- ½ tsp dried thyme
- ½ tsp dried oregano
- 1/2 tsp salt
- Black pepper (omit for AIP elimination)
- 1 tbsp balsamic vinegar
- 1 tbsp mustard (omit for AIP)
- 1 cup bone broth
Instructions
- Bring a large pot of water to a boil with salt. Carefully remove 10–12 cabbage leaves, keeping them intact. Trim the thick stem at the base of each leaf to create a V shape.
- Blanch the leaves in boiling water for 1–2 minutes, then drain and set them aside to cool.
- Mince the garlic and dice the onion.
- Combine the ground meat, onion, garlic, egg, cauliflower rice, thyme, oregano, salt, balsamic vinegar, and mustard in a large bowl. Mix thoroughly until well combined.
- Preheat the oven to 350°F (175°C). Lay a cabbage leaf flat, add 2–3 tablespoons of the filling to the center, fold the sides inward, and roll tightly. Place seam-side down in a baking dish. Repeat with remaining leaves and filling.
- Pour the bone broth over the rolls. Cover the dish with foil to prevent drying and bake for 45 minutes.
Recipe Notes:
- Before assembling the rolls, cook a small amount of the filling in a skillet to check the seasoning and adjust if needed.
- You can easily switch for almost any cabbage or Swiss chards or any ground meat without affecting the results of the recipe.
- If you want to make this recipe egg-free, you can just omit the egg. The texture might be slightly drier but it wont change much.
