Description

These nightshade-free cabbage rolls combine tender cabbage leaves, savory ground meat, and flavorful cauliflower rice, all cooked in nourishing bone broth. The definition of a healthy comforting dish.

Ingredients

  • 1 green cabbage
  • 1 lb ground meat (chicken, turkey, veal, pork
  • 1 small onion
  • 3 garlic cloves
  • 1 cup cauliflower rice
  • 1 egg
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • 1/2 tsp salt
  • Black pepper (omit for AIP elimination)
  • 1 tbsp balsamic vinegar
  • 1 tbsp mustard (omit for AIP)
  • 1 cup bone broth

Instructions

  1. Bring a large pot of water to a boil with salt. Carefully remove 10–12 cabbage leaves, keeping them intact. Trim the thick stem at the base of each leaf to create a V shape.
  2. Blanch the leaves in boiling water for 1–2 minutes, then drain and set them aside to cool.
  3. Mince the garlic and dice the onion.
  4. Combine the ground meat, onion, garlic, egg, cauliflower rice, thyme, oregano, salt, balsamic vinegar, and mustard in a large bowl. Mix thoroughly until well combined.
  5. Preheat the oven to 350°F (175°C). Lay a cabbage leaf flat, add 2–3 tablespoons of the filling to the center, fold the sides inward, and roll tightly. Place seam-side down in a baking dish. Repeat with remaining leaves and filling.
  6. Pour the bone broth over the rolls. Cover the dish with foil to prevent drying and bake for 45 minutes.

Recipe Notes:

  • Before assembling the rolls, cook a small amount of the filling in a skillet to check the seasoning and adjust if needed.
  • You can easily switch for almost any cabbage or Swiss chards or any ground meat without affecting the results of the recipe.
  • If you want to make this recipe egg-free, you can just omit the egg. The texture might be slightly drier but it wont change much.
