Ingredients
  1. 1 large just yellow plantain
  2. 4 tbsp. coconut milk
  3. 2 tbsp. coconut oil
  4. Pinch salt Shake of cinnamon
  5. Pinch of turmeric
  6. 1/4 a ripe banana (optional)
Instructions
  1. Peel & slice plantain.
  2. Add all ingredients the bowl of your blender,
  3. Blend in a high powered blender until smooth.
  4. Cook 3 slices of bacon in skillet, remove, chop.
  5. In the same skillet pour/scrape out plantain mix right into hot skillet, use spatula to smooth out and shape.
  6. Sprinkle bacon in top.
  7. Cook on medium for a few minutes.
  8. In the meantime heat broiler to 400F.
  9. If you can’t flip the pancake, place skillet in oven, and let broiler cook the top until toasty.
  10. Remove & let it sit for a few minutes before eating, this thing retains a lot of heat!
  11. This was delicious!
  12. Not a super fluffy pancake but tasty and satisfying.
  13. It was crispy on the outside and smooth on the inside and had a great crunch from the bacon!
