Grain Free Zucchini Pancakes
1 large zucchini
1 egg white, scrambled
1 tbsp tapioca flour (or whatever flour you have on hand will work)
1 tsp minced garlic
salt + pepper
Organic Coconut Spray Oil
Wash and dry zucchini and cut ends off. Grate it with a cheese grater. Place all of it in a Nut Milk Bag or in a large, clean kitchen towel.
Wrap up and squeeze all liquid out of zucchini. There will be quite a bit.
Return dehydrated zucchini to bowl, mix with egg white, flour, garlic & salt + pepper.
Heat skillet on medium-high. Spray with coconut oil. Drop heaping tablespoon of mix on to skillet and flatten out in to 1/4 thick pancakes.
Cook on medium aprx 3-4 minutes each side.
You could totally make these in the oven too!
